Well, here we are at the start of another week {yeah, it’s Tuesday, but whatever}.  This past weekend kind of feels like a blur.  I don’t really remember what I did or where I went.  I think it’s the winter weather.  Everything was just kinda blah.
I do remember us eating out a LOT.  At least for us that is.  And by eating out I mean ordering take-out.  I pulled the lazy card and ran with it.  Pizza one night and hot baked subs the next night.
Needless to say, by Sunday my family was craving and asking for a home cooked meal.  More like begging for a home cooked meal.
They’re animals.
I eventually gave in.

I hadn’t made meatloaf in about a year, so that got slapped together.  And well, meatloaf pairs well with mashed potatoes right?
Since I was still holding my lazy card nice and high I thought, “can’t I just throw my potatoes in the crock pot with some broth and seasonings and let it do the work for me?”
I was much more interested in finishing Making a Murder that afternoon while the kids napped, rather than hovering over the stove boiling potatoes.
Ahem.  Making a Murder.  I’m nervous to say where I believe he is guilty or not-guilty, for fear of reader backlash, but, I’d love to know your thoughts….see how I did that?  Ha.
So while I snuggled into Netflix to finish up that series, these potatoes where cooking in thecrock pot.  A bit of broth and fresh garlic made the house smell wonderful.  Like I actually was making an EFFORT towards dinner, when really all I did was throw three items in the crock pot.

Speaking of Netflix, what other shows, movies or documentaries do I need to put on my watch list? I’m slowly making my way through Call the Midwife, thinking about Parenthood, followed by a little Friday Night Lights.
Give me more suggestions!
Funny or serious….or possibly shows that make me cry.  Whatever, I’m game.  I feel like the past few years I was in the thick of child rearing and I missed out on all the popular shows and movies.  I’m making up for lost time!

You know what else is on my mind?
Writing an e-book.  Anyone interested in that?  It has been stewing in my mind for awhile.  I have a topic idea, but I’m not fully ready to shout that from the heavens just yet.  My blog is growing, slow and steady, a bit like a tortoise.
I’d prefer the hare.
One way to jump that growth might be with an e-book.  They are going over like gangbusters in the food blog world and my proposed topic is a hot button.  I will be talking with a big-time food blogger who specializes in this later today.  So stayed tuned my faithful readers.Maybe 2016 will be my year?
Until then, I’m cooking, baking, child rearing, and trying to stay sane on most days.  I hope you keep following this journey!
AndPLEASE make these potatoes.  We had the leftovers tonight and they might have been even better.  I mean, who doesn’t like this creamy, comforting side dish?
I use my6 Quart Cook ‘N Carry Crock Potfor these and love it.  Such asteal on priceright now!
3-Step Crock Pot Mashed Potatoes
3 lbs. peeled potatoes
1 c. chicken or vegetable broth
3 cloves minced garlic
1/2 stick unsalted butter
4 oz. cream cheese
1/2 c. milk
1/4 c. Parmesan cheese
1 t. salt
Step 1:  Place potatoes, garlic and broth in yourcrock pot.  Set to LOW and cook for 4-6 hours.
Step 2:  Check potatoes for tenderness, if done, add in butter, cream cheese, milk, cheese and seasonings.
Step 3:  Mash potatoes with a hand masher or animmersion blender.  Mash to your desired like – leaving chunky or blending until smooth.
Potatoes can stay on warm in the crock for a few hours before serving or eaten right away.
